Happiness Project – Day 2
I love to cook but my roommate Nancy does not share my enthusiasm for this hobby. So today, on a total whim, when she decided she would like to try to make homemade pickles, I was totally stoked. A couple of hours later, they’re in the fridge and we’re counting the days till they are ready. (I’ll share the recipe below.)
I also made turkey tenderloin and the biggest, sweetest, sweet potato you’ve ever seen. My Southern Grandma would be so proud!
Super Easy Garlic Pickles:
6 cups water
1/4 cup kosher salt
2T white vinegar
2 lbs small cucumbers, cleaned and sliced
3/4 c chopped fresh dill
9 cloves garlic, coarsely chopped
9 black peppercorns
Bring water, vinegar and salt to a boil over medium heat. Set aside to cool.
Pack cucumbers and remaining ingredients in jar and completely cover with cooled liquid.
Store covered in the refrigerator. They will be ready in seven days!
